- 5 cups small pattypan squash
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 tsp salt
- 1/4 tsp dried oregano
- 1/4 tsp dried thyme
- 1/4 tsp pepper
- 1 tbsp fresh parsley, minced

Preheat oven to 425 degrees F.

Place squash in a greased baking pan.

In a bowl, mix together every other ingredient (except for parsley), then drizzle it over the squash.

Roast 15-20 mins or until tender, stirring occasionally.

Sprinkle with parsley.
