Garlic-Herb Pattypan Squash

 INGREDIENTS

  • 5 cups small pattypan squash
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp pepper
  • 1 tbsp fresh parsley, minced
  1.  Preheat oven to 425 degrees F.

  2. Place squash in a greased baking pan.

  3. In a bowl, mix together every other ingredient (except for parsley), then drizzle it over the squash.

  4. Roast 15-20 mins or until tender, stirring occasionally.

  5. Sprinkle with parsley.
