Honey-Ginger Shrimp Salad

  • Juice of 2 limes and/or lemons
  • 1 tbsp dijon mustard
  • 1 tsp finely grated ginger
  • 1 tbsp honey
  • 2 pounds (about 36) cooked shrimp
  • 8 cups mixed salad greens
  • 1/4 cup cilantro (optional)
  1. In a small bowl, whisk the lime juice, mustard, ginger, and honey together (Add cilantro if wanted).
  2. Place shrimp in a large resealable plastic bag.
  3. Pour the lime juice mixture over the shrimp until fully covered.
  4. Let the shrimp marinate in the fridge for 4 hrs.
  5. Mix the marinated shrimp with the salad greens and serve.
