Moqua (Winter Melon) Tea

  • 3.5 lbs winter melon meat, rinds and seeds removed and meat cut into 1-inch cubes
  • 18 oz brown sugar
  • 9 oz rock sugar
  1. In a soup pot, mix the winter melon and brown sugar together. Set aside for an hour. By then, some liquid should have formed.

  2. Add rock sugar and mix.
    Place pot on a stovetop, turn on heat, and bring to a boil.

  3. Cover pot and reduce the heat to a simmer. Cook until winter melon is completely transparent (about 2 hrs).

  4. Turn off heat. Strain and press the winter melon mix as much as possible, conserving the strained liquid. The strained liquid is the winter melon syrup.

  5. Make tea using 1 part concentrated winter melon syrup and 3 parts water.
