3.5 lbs winter melon meat, rinds and seeds removed and meat cut into 1-inch cubes
18 oz brown sugar
9 oz rock sugar
In a soup pot, mix the winter melon and brown sugar together. Set aside for an hour. By then, some liquid should have formed.
Add rock sugar and mix. Place pot on a stovetop, turn on heat, and bring to a boil.
Cover pot and reduce the heat to a simmer. Cook until winter melon is completely transparent (about 2 hrs).
Turn off heat. Strain and press the winter melon mix as much as possible, conserving the strained liquid. The strained liquid is the winter melon syrup.
Make tea using 1 part concentrated winter melon syrup and 3 parts water.
