Oven Roasted Yardlong Beans

  • 1 lb fresh yardlong beans, trimmed
  • 2 tbsps olive oil
  • Zest and juice of 1 lemon
  • 4 garlic cloves, peeled and minced
  • 2 tbsp capers
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  1. Preheat oven to 400 degrees F.

  2. Scatter yardlong beans on a parchment-lined baking sheet. Top with the rest of ingredients. Using your hands or kitchen tongs, massage the ingredients together. Then coat the beans in oil.

  3. Roast in oven for 10-15 mins, shaking the pan half-way through, until beans are tender and lightly browned.
