Spaghetti Aglio Olio with Bacon

  • Salt
  • 1 lb spaghetti
  • 3-4 garlic cloves, peeled and cut
  • Black/ground pepper
  • 3 tbsp olive oil
  • Freshly grated Parmesan cheese
  • 2-3 tbsp cilantro, minced
  • 6 bacon strips, diced
  1. In a large pot, bring about 5 quarts of water to a rolling boil and add 2 tablespoons of salt.

  2. Add in the spaghetti and cook for 7-8 mins or until slightly firm.

  3. Heat a large pan or skillet and cook the bacon till slightly crisp and light brown.

  4. Remove the bacon onto a plate, reserving bacon fat in the pan, and keep the flame on.

  5. Add olive oil and garlic to the pan and sauté.

  6. Add the spaghetti to the garlic oil mixture and stir well. Add the cilantro as well. Season with salt and pepper.

  7. Once finished, add the Parmesan cheese.
