Steamed English Peas

  • 4 cups shelled English peas
  • 1/4 cup water
  • 1 tbsp unsalted butter
  • 2 tsp finely chopped fresh chives or chervil or flat-leaf parsley
  • 1/2 tsp fine sea salt
  • 1/4 tsp ground black pepper
  1. Combine the peas and water in a medium saucepan.

  2. Cover and bring to a simmer over medium heat.

  3. Cook, stirring and monitoring heat as needed to maintain a simmer, until peas are tender, about 6 to 8 minutes.

  4. Drain the peas, return them to the pan, and stir in butter, herbs, salt and pepper.
