Stir-Fried Sin Qua with Eggs

  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 lb sin qua, peeled and roll-cut into 1-inch pieces
  • 2 eggs, lightly beaten
  • 2 tsp fish sauce
  • White pepper, to taste
  1. Heat oil in a 12-inch non-stick skillet over medium-high heat until shimmering.

  2. Add garlic and stir-fry until light brown and fragrant, about 30 seconds.

  3. Add gourds and fish sauce to pan. Stir and cook until lightly softened, about 1 minute. Add eggs.

  4. Cook, stirring, until eggs are barely set, about 1 minute longer.

  5. Transfer to a plate and dust with white pepper. Serve with rice.
